Golden Pascal Celery seed produces crunchy stalks with an unmatched flavor to that of store-bought celery. Golden Pascal Celery is a French heirloom celery variety that grows tall, slender, golden stalks. Unlike watery celery from the grocery store, this variety has a flavorful celery “kick” that makes every dish tastier.
Recommending Planting Requirements: Celery is a cool-season crop that needs long periods of mild weather and a constant supply of moisture for uninterrupted growth. You can achieve this in Southern California and warmer climates by planting in deeply amended soil with lots of compost. The compost helps the soil stay moist. You can also mulch heavily to keep the soil moist and cool.
Growing Recommendations: Celery can be direct sown or transplanted. We start our celery in the greenhouse by seed in wintertime and plant out when it is around 2-3″ tall. You can use shade cloth if planting in springtime to extend the season.
Harvesting & Storage: Celery shoots may be harvested as soon as they are big enough for use. We like to harvest many at a time to place in a vase of water that stays in the fridge. This practice allows us to have quick access to one of our favorite recipe starters! Once the days get longer and the weather warms, your celery will want to go to seed. You can let the plant go to seed and harvest celery seed for a kitchen herb. We mix it with salt to make celery salt. So delicious! Learn how to use celery salt here.
