After years of trialing eggplant varieties, we fell in love with this ageless heirloom. We love it for its production, consistently sized fruit, and the ability to create huge canopies that shade out weeds. During the 2017-2018 season, we produced seed for this garden staple on our organic farm and are now excited to offer regionally adapted black beauty seeds. This variety is great for slicing large pieces of eggplant that can be fried or baked for classic dishes like eggplant parmesan.
Suggested Planting Requirements: All plants love to grow in fertile, well-drained soils. Eggplants will tolerate less than desirable soil but can benefit from the addition of organic fertilizer and compost if your soil is less than the best. Growing Recommendations: Transplant to the garden when all danger of frost has passed and the soil temperature has reached 60°F. Eggplants can be fairly drought tolerant but do well in optimal moisture levels. Adding mulch helps to keep weeds down and moisture in your soil. On our farm, we add as much mulch as we can get our hands-on.
Harvesting & Storage: Fruits can be harvested anytime after half of the mature size, but don’t wait too long, over-ripe fruit is tough and bitter. We like to harvest them when they are 3-4″ wide. Eggplants do not store well and should be used soon after harvest.
